For the folks out there that are not red meat eaters and are tired of chicken and turkey - here's some good news about duck. A cupful of skinless duck contains 33 grams of protein and only 281 calories. It contains more iron, zinc and copper than chicken or turkey (source: Mens' Health Dec 2011).
Here's Your Healthy Tip of the Day: It's Duck Season! You can grill it, roast it, chop it, grind it and make every single dish with duck breast that you would with chicken or turkey. If you're lucky enough to get a whole duck, then place it skinless on a rack in a pan with 1/3 water and roast it at 400 degrees farenheit. Any fat will drip from the duck into the hot water bath. It's delicious and nutritious!
