Chicken Quesadillas with Apple and Brie

So, what's for dinner when you haven't much time and don't feel like 'diet' food?  Fitness Rx magazine, Oct 2011 issue recently published a delicious alternative to a boring evening lo-cal meal:

1 large spinach tortilla or wrap
1 tsp peanut or sesame oil
3oz roasted, skinless chicken breast, thinly sliced
2oz sweet crisp apple, thinly sliced and then sliced into semi-circles
2oz brie cheese with the rind, thinly sliced
2Tbsp honey mustard

Heat oil in a large skillet and place tortilla in the pan.  Arrange brie evenly on the tortilla and let begin to melt.  Cover one half of the cirlcel with the chicken and fold to close.  Flip semicircle over and cook until slightly golden.  Remove from heat, carefully pull tortilla open, drizzle with honey mustard and top with apple slices.  Fold to close and cut in half to reate two 45-degree triangles.  Makes 2 servings.
